Ingredients
FRESH FROM THE STORE
- 1 cup Ground Beef
- 3 Tomatoes
- 1/2 cup Onion
- 1 bunch Parsley to garnish
FROM YOUR PANTRY
- 3 tbsp Chipotle Spice Mix
- 1 cup Rice
- 2 tbsp Rice Vinegar
- 3 tbsp Vegetable Oil
- Salt to taste
- CHIPOTLE SPICE MIX INCLUDES:
- Chipotle Chile, Garlic, Oregano, Onion, Salt
Instructions
Step 1
Heat up 1 ⅓ cups of water in a pot. Once boiling, add rice, cover and reduce the heat to low. Cook rice for about 12 to 15 minutes, or until the rice is tender and completely has absorbed the water. Set the rice aside and fluff it with a fork.
Step 2
Heat up 2 cups of water in a pot. Once boiling, add tomatoes. Cook them for 10 to 15 minutes until their skin starts pulling off.
Step 3
Meanwhile, add ground beef and 2/3 of the diced onion in a bowl. Add a pinch of salt. With your hands, kneat the ingredients until they are evenly mixed.
Step 4
With a tablespoon, separate 1 portion of the Ground beef mix and form a ball with your hands. Set apart on a flat board or plate. Repeat until all your ground beef mix is finished.
Step 5
In a blender, add Chipotle Spice Mix, the cooked tomatoes, 1/3 of the diced onion, salt, rice vinegar and 1 cup of water. Blend ingredients to make sauce.
Step 6
Heat up oil in a pan. Place the meatballs in the pan. Cook them at medium heat for 10 minutes. Keep turning them carefully to cook them evenly on each side.
Step 7
Turn the heat to low. Add tomato sauce, cover the pan and let simmer for 10 minutes.
Serve the meatballs on a bed of rice. Garnish with fresh parsley.
