FRESH FROM THE STORE
- 2 Chicken Breasts
- 1 cup Couscous
- 1/2 cup Tomatoes
- 1/2 cup Chickpeas
- 2 cups Chicken Stock
- 1/4 cup Onion
- 1 bunch fresh Mint leaves to garnish
FROM YOUR PANTRY
- 3 tbsp Harissa Spice Mix
- 5 tbsp Vegetable Oil
- HARISSA SPICE MIX INCLUDES:
- Guajillo Flakes, Cumin, Coriander, Hungarian Paprika, Garlic, Salt, Caraway, Cinnamon
Cut chicken breasts into small cubes. Add 3 to 5 tbsp of Harissa to it and refrigerate for 30 minutes.
Heat up oil in a pan. When it’s hot, ddd diced onion and sautée for 2 minutes at medium heat.
Add chicken, tomato, chickpeas, onion and chicken stock to onion and sautée ingredients for 5 minutes at high heat.
Turn heat down to low, cover pan and let chicken-vegetables mix simmer for 30 minutes. Stir ingredients every few minutes.
Heat up 1 1/2 cups of water in a pot. When boiling, add couscous. Turn down heat, cover with a lid and let sit for 10 minutes.
