  • 1 cup Rice Noodles
  • 1 cup Soy bean sprouts
  • 1 Thai Chili
  • 2 Eggs
  • 3 tbsp TamarInd Paste
  • 2 Green Onions

FROM YOUR PANTRY

  • 3 tbsp Phad Thai Spice Mix
  • 2 tbsp Fish Sauce
  • 4 tbsp Tamari Sauce
  • Coconut or Vegetable oil for cooking
  • PHAD THAI MIX INCLUDES:
  • Cayenne Pepper, Garlic Flakes, Peanuts

Instructions

Step 1

Heat up 2 cups of water in a pot over high heat. When water starts boiling, add rice noodles and stir to separate. Cook until barely tender to bite, 4 – 5 minutes. Then drain. If not using immediately, rinse well to keep noodles from sticking together, drain again.

Step 2

Heat up oil in a pan. Place Tofu cubes and Soy bean sprouts and sautee at high heat for 5 to 10 minutes until they turn slightly golden brown from the outside.

Step 3

Whisk eggs and add them to the pan. Turn heat down to medium. When egg starts to become firm, scramble into small pieces.

Step 4

Add noodles, Tamari Sauce, Tamarind paste and Spice mix. Mix all the ingredients well, then serve Phad Thai immediately. Garnish with fresh green onion.

Enjoy!
