Carrot Ginger Soup
This soup recipe is very simple with few ingredients. It tastes best when it is blended until perfectly smooth
FRESH FROM THE STORE
- 2 cups Carrots
- 1/2 cup Onion
- 2 Garlic Gloves
- 1 tbsp Cilantro
- 2 tbsp Ginger
- 1 cup Chicken Broth (Gluten Free)
FROM YOUR PANTRY
- 1/2 cup Coconut Milk
Peel carrots and cut in halves. Cut onion, ginger and garlic in small cubes. Heat up oil in a pan. Add garlic, ginger, onion and carrots.
Cook at medium heat until onion turns transparent. Then add coconut milk, chicken broth cubes and 3 cups of water.
After cooking the soup ingredients for 15 minutes, transfer the mixture to a food processor and blend.
